Black lentil stew. Inspired by this recipe from Smitten Kitchen! So much flavor!
If you follow the recipe and do the extra items outlined below, you'll get what I made in the photo.
1 c. - Carrots: sliced rounds
1 c. - Celery: small dice
1 heaping Tbsp. - Tomato Paste: *saute that with the vegetables to create that fond so you can deglaze the pan with the water later*
To Finish: a half of lime squeezed when you're done cooking and it's seasoned with enough salt the way you like it.
